The secret’s in the breading: Only one side of the chicken has it; plus, whole-wheat bread subs in for white, and an egg white replaces a whole one.

INGREDIENTS

2 slices whole-wheat sandwich bread, torn into pieces

1 tablespoon grated Parmesan cheese

1 teaspoon olive oil

Coarse salt and ground pepper

2 tablespoons all-purpose flour

1 large egg white

4 boneless, skinless chicken breast halves, (6 to 8 ounces each)

3/4 cup shredded part-skim mozzarella (3 ounces)

1 can (28 ounces) whole peeled tomatoes, in puree

1 garlic clove, minced

PREPARATION

1. Preheat oven to 425 degrees, with rack in upper third. Line a rimmed baking sheet with aluminum foil; set aside. In a food processor, place bread, Parmesan, oil, and a pinch each salt and pepper. Pulse until coarse crumbs form; transfer to a shallow bowl. Place flour in a second shallow bowl; season with salt and pepper. Place egg white in a third shallow bowl, and beat with a fork until frothy.

2. Dip top side of a chicken breast in flour, shaking off excess. Dip same side in egg white, letting excess drip off, then in breadcrumbs, pressing to adhere. (Do not bread other side.) Repeat with remaining chicken and transfer, breaded side up, to prepared baking sheet. Bake until breadcrumbs are crisp and browned, 8 to 10 minutes. Remove from oven; sprinkle with mozzarella. Continue baking until chicken is opaque throughout and cheese is lightly browned, 2 to 4 minutes.

3. Meanwhile, in a large skillet, place tomatoes, breaking them up with your fingers. Add garlic; season with salt and pepper. Bring to a boil, reduce to a simmer, and cook until sauce has thickened, 6 to 8 minutes. Serve chicken with a generous amount of tomato sauce.

Here is one of my favorite French stews: Basque-Style Chicken. While some versions call on stewing the ingredients together, this version has you add the roasted red peppers and the prosciutto toward the end of the recipe. That way, they stay fresh and vivid, and make for a more striking, colorful, and up-to-date version of the dish.

INGREDIENTS

8 bone-in, skin-on chicken thighs

salt and freshly ground black pepper to taste

3 tablespoons extra virgin olive oil

1 medium-sized onion, halved and sliced

6 garlic cloves, minced

1/2 cup sweet vermouth

1/2 cup low-sodium chicken broth

1 14.5-ounce can whole tomatoes, drained and puréed in a food processor

1/2 teaspoon dried thyme, crushed

1/2 teaspoon teaspoon piment d’Espelette or 1/2 teaspoon Spanish paprika and 1/8 teaspoon cayenne pepper

1 7-ounce jar roasted red bell peppers, drained and thinly sliced (about 1 cup)

1/4 cup diced prosciutto or jambon de Bayonne (about 1 ounce)

PREPARATION

1. Snip away and discard any excess skin from the chicken thighs. Season the thighs with salt and pepper. Heat 2 tablespoons of the olive oil in a Dutch oven or braiser over medium-high heat until it shimmers; add the chicken and cook, turning occasionally, until brown on all sides, 10 to 15 minutes (reduce the heat to medium if the chicken browns too quickly). Transfer the chicken to a plate. Drain off all but 1 tablespoon of fat from the pan.

2.Reduce the heat to medium and add the onion. Cook, stirring, until tender, 4 to 5 minutes; add the garlic and cook, stirring, until fragrant, about 30 seconds more. Remove the pan from the heat and add the vermouth and chicken broth, taking care not to let the liquid spatter. Return the pan to the heat and cook, stirring to loosen any browned bits from the bottom of the pan. Return the chicken to the pan, skin side up, and add the puréed tomatoes, thyme, and piment d’Espelette. Bring to a boil and then reduce the heat. Cover and simmer until the internal temperature of the chicken registers 180°F on an instant-read thermometer, 30 to 35 minutes. Add the sliced roasted red peppers about 5 minutes before the end of the cooking time.

3. Meanwhile, heat the remaining 1 tablespoon oil in a small skillet until it shimmers. Add the prosciutto and cook, stirring, until crisp, 1 to 2 minutes. With a slotted spoon, remove the prosciutto from the pan and drain on paper towels.

4. With a slotted spoon, divide the chicken and peppers among four shallow bowls. Boil the pan sauce over medium-high heat to the desired consistency. Top the chicken with the sauce, sprinkle with the crisped prosciutto, and serve.

These spring rolls are filled with smoked salmon, tender-crisp asparagus and plenty of fresh herbs. Spring rolls look impressive when you put them out for a party, but they are actually easy to make. To simplify the process, lay out all the ingredients you need to make the rolls near your work surface before you begin.

INGREDIENTS

SPRING ROLLS

24 thick or 36 thin asparagus spears (about 2 pounds)

2 3- to 4-ounce packages smoked wild salmon

12 8-inch rice-paper wrappers (see Notes)

1 ripe avocado, cut into 24 slices

1 cup shredded carrot

1/2 cup chopped fresh basil

1/2 cup chopped fresh mint

DIPPING SAUCE

1/3 cup reduced-sodium soy sauce

2 tablespoons orange juice

2 tablespoons lemon juice

2 tablespoons mirin (see Notes)

1/4 teaspoon crushed red pepper, or more to taste

PREPARATION

To prepare spring rolls: Bring 1 inch of water to a boil in a large skillet. Trim asparagus spears to no longer than 6 inches; add to the boiling water. Partially cover and cook the asparagus until tender-crisp, about 3 minutes. Drain; refresh under cold water. Cut each spear in half lengthwise. Cut salmon slices into 12 strips no longer than 6 inches each.

Soak one wrapper at a time in a shallow dish of very hot water until softened, about 30 seconds. Lift out, let excess water drip off and lay on a clean, dry cutting board.

Center a strip of smoked salmon in the bottom third of the wrapper, leaving a 1-inch border on either side. Arrange 4 thick (or 6 thin) asparagus spear halves (overlapping as necessary) over the salmon. Top the asparagus with 2 avocado slices, 1 tablespoon shredded carrot and about 2 teaspoons each basil and mint. Fold the wrapper over the filling and roll into a tight cylinder, folding in the sides as you go. Repeat with the remaining wrappers and filling. Cut each finished roll in half.

To prepare dipping sauce: Whisk soy sauce, orange juice, lemon juice, mirin and crushed red pepper in a small serving bowl. Serve the rolls with the sauce.

DIRECTIONS

.

1. Heat a medium skillet over high heat until very hot. Add tomatoes and cook, turning occasionally with tongs, until charred on all sides, 8 to 10 minutes. Transfer to a plate to cool slightly. Cut the tomatoes in half crosswise; squeeze to discard seeds and chop the remaining pulp and skin.

.

2. Cut chicken into 1-inch chunks; sprinkle with salt and pepper. Add 1 teaspoon oil to the pan and heat over high heat until very hot. Add the chicken and cook, stirring occasionally, until it is browned and no longer pink in the middle, 3 to 5 minutes. Transfer to a plate.

.

3. Reduce the heat to medium and add the remaining 1 teaspoon oil. Add onion and cook, stirring, until softened, about 2 minutes. Add garlic and jalapeño and cook, stirring, until fragrant, about 30 seconds. Add lime juice, the chicken and tomatoes. Cook, stirring, until heated through, 1 to 2 minutes. Stir in cilantro and scallions. Divide the chicken mixture among tortillas. Serve with lime wedges.

.

Charring tomatoes in a hot, dry skillet makes them smoky and flavorful; in combination with fresh herbs and spices, they elevate this dish from “everyday” to “ta-da!” Serve the tacos with reduced-fat sour cream.

Praising a child correctly is important to the development of positive behaviors. It’s a great way to encourage constructive future behavior. When you give praise you are giving your child a feeling of positive feedback, which increases their sense of confidence, self esteem and abilities. When you praise your child, you are pointing out the way they’ve acted, an action they’ve taken, or simply who they are. When your child looks good, tell him so. When your child does anything that pleases you, let him know. You should also praise a child’s effort to do well, even if it doesn’t come out so good in the end. You should find something each day about your child to praise.

The Happy Child Guide changes the way parents think about raising smart, happy and cooperative kids.

Be on the lookout constantly for behaviors or actions deserving of praise, but don’t be over the top about it. Be sincere and honest in your praise. Wait for unexpected or previously unnoticed good behavior and praise your child for it. And when you see such action or behaviors, praise immediately so the child will know exactly what behavior or action was deemed praiseworthy. It’s also very important to look your child square in the eye when you praise him, and reinforce the positive behavior, action or trait being praised with a gesture such as a warm smile, a hug, scruff of the hair, or caress his face while you tell him.

Be exact, and state precisely what action, behavior or trait you find praiseworthy. And most importantly, never directly follow praise with criticism or negative comments. Let your child know what they did right and reward them for it before you let them know what they did wrong and punish for misbehaving or a misdeed.

So be sure to admire and congratulate your child and celebrate the good person they are growing into by praising their positive actions, behaviors and traits daily. You’ll be building a strong sense of self in your child and you’ll grow closer as a result.

Disciplining a young child using the time out method can be very effective, and will work with children as young as 18-24 months old. By using this method of discipline parents are giving the child time to sit quietly and alone after misbehaving, without becoming angry or agitated with the child.

Designate an appropriate area in the house where the child is isolated from interacting with others. It can be a corner in their bedroom, a space on the kitchen floor or a special chair that’s labeled specifically for time outs. The length should be age appropriate. A good rule of thumb is generally one minute per year of age. A kitchen timer is helpful in counting down your child’s punishment time.

Time out for toddlers is used to give them a chance to regroup and calm down. It’s doubtful they will sit completely still, and they should not be forced to try.

All children should be asked in a firm but pleasant tone to complete a designated task or stop an undesired behavior. If their behavior persists, they should be verbally directed to behave once again, with eye contact being made and the time out spot pointed out. If after this warning the behavior still persists, they should be escorted to the time out location and told exactly why they are being sent there. Maintain a calm but firm tone with them. Once they’ve quietly served their time in the time out location it’s important to discuss with the child why they were sent there and that if the behavior occurs again, they will again be sent to time out. Older children should then agree to do what you told him to do or cease misbehaving. Children who leave their time out location before their time is up must be made aware that privileges will be lost as a result.

It’s likely that your time out method will have to be modified to fit the temperament of your child and your own parenting style. And remember to reinforce positive behavior with praises, hugs and smiles. Time out can successfully be used outside the home such a grocery stores, restaurants, or shopping centers. It’s important to emphasize to the child that time out will be enforced should they misbehave while there. Be consistent and place the child in time out should they misbehave in the store. If you don’t, they’ll get the message early on that you’re inconsistent and will be more likely to test your boundaries.

blue cheese dressing

Step 1: Heat oil in a deep fryer to 375 degrees. In a large bowl combine flour, black pepper, salt, and garlic powder. In a medium bowl beat together the eggs and milk. First roll the chicken pieces in the flour mixture, then dip into the egg mixture and roll the chicken bits once more in the flour mixture until well coated.

Step 2: Deep fry breaded chicken bits in batches at 375 degrees for about 5 minutes per batch or until chicken is fully cooked. Drain on paper towels.

Step 3: While chicken is frying, in a small sauce pan over low heat add hot sauce and butter. Cook until the butter has melted and is combined with the hot sauce. In a large bowl toss the chicken bits with hot sauce until fully coated.

Step 4: to make tacos- place a few buffalo chicken pieces onto the bottom of a flour tortilla. Top with lettuce, tomato, cheddar cheese, and blue cheese.

Raising twins can be a little demanding. Compared to normal parents with normal kids, having twins means you have to do a double take on everything. As you get through the regime, you can make a lot of adjustments and improvise on your ways to do what must be done in less time and be more productive.

There is no complaining here, being a parent is the epitome of human existence but being a parent of two kids at the same time, places me where? At first, being a parent of two kids with same demands and woes can be gruesome. It means you have to spend money twice, do the washing twice, the bathing twice and the food preparation twice. When you get the hang of thing, as every parent usually does, you get to have fun with the experience.

Looking at the brighter side of it, there are perks of having twins. Despite the demands of raising twins, having two means you get to enjoy things double. Here are the things I like about being a mother of twins.

1. I get to raise my shopping budget without worrying whether I am spending too much

Aside from having the chance to show off my twins in the mall which is a sure way to make me a superstar mom, I also get the best deals. Buy one take one is a major eye catcher for me. I can stock loads of diapers and not worry whether it is too much. Aside from the fact that I am spending for my kids and not for myself, there is no complaining here. I like buying things for the twins and spending for shopping even if I don’t really get to wear and use what I bought.

I just don’t think shopping would be a breeze when you have paternal twins. Twins with different gender can cause shopping to be a little too much.

2. When you have twins, you don’t need to worry about entertaining them

My twins entertain each other. They don’t need me to play with them, they don’t need another playmate, they are just happy as they are. You can just leave them as they are and do your chores, wait till its feeding time or time to change diapers then they are good to go again. You just have to worry about tantrums. Although by experience, when the one cries the other tries to sing a duet with the crying gal and it can be a handful.

3. Too much love compensates for all the hard work

When you see your kids smile, it just warms your heart right? How much more if you see two kids smiling at you? Just like silently thanking you for the love and affection you have shown them. It makes you even prouder to see them in their first step or the first time they say “Mama”. Everything they do just makes you happy and not to mention its double.

Having twins can be a handful, but when you look at the joy it brings, it is as if nothing can compensate for the joy and love. Being a parent to twins either identical or paternal twins is something that you can be very proud of.
